36 Paleo Foods Found at Sam’s for CHEAP!

March 4, 2013 by Jackie Ritz 10 Comments

You may have read my post on 50 Paleo foods I found at Costco for cheap. If you didn’t, then go read it, especially  if you live near a Costco. If you don’t, then, maybe, you have a Sam’s Warehouse nearby. Today I found 36 Paleo food items at Sam’s. There isn’t nearly as much organic options at Sam’s, but there is some budget-friendly food options!

(Disclosure: in writing this list and my Costco list, I never expect for people’s convictions to stop at the door. If you are uncomfortable buying non-organic foods, non-free-range chickens, and non-grassfed meats, then please know that I support that decision. However, for the people who are trying to fit Paleo into their budget and make it work for their families, these foods may be their best and only option. And these unprocessed foods are far superior to frozen country-fried steaks and boxed macaroni and cheese which so many are coming off of. So, please double-check the ingredients and don’t buy anything you’re uncomfortable with. )

And the walnut and pecan pieces were over my budget so I had the cashier put them back. I only bought the meat that was on sale because our Farmer’s Market was closed this weekend and I didn’t have a chance to shop around much for sales on more sustainable meats. Oh well, you win some, you lose some. This should last us over a week and, hopefully, into the 2nd week.

Salmon Patties with a Creamy Lemon-Dill Sauce

March 3, 2013 by Jackie Ritz 34 Comments

I’m always looking for budget-friendly ways to get seafood into my family. If I have the money in our budget I will buy fresh salmon, cause we all know that is the best. But, if I don’t have the money, I don’t stress, I just grab some canned WILD-caught salmon and find creative ways to use it. I get my salmon from Costco for a good price, along with a bunch of other things.

Last night, I made a great salmon patty with a cream sauce worth sharing. These are Whole30 and 21 Day Sugar Detox friendly!!! Hope you like it!

Salmon Patties with a Creamy Lemon-Dill Sauce

_MG_7200

Ingredients:

2 (6-ounce) cans of wild salmon

4 eggs

1 TB of mustard

1 cup of almond flour

4 cloves of garlic, minced

1 onion, finely diced

1/2 ts pepper

1/2 ts salt (optional)

1 ts dill

2-4 TB of coconut oil/or butter/or lard

Directions:

1. Preheat a cast iron skillet over medium heat with your fat/oil of choice.

2. In a bowl, whisk your eggs, then add the onions, garlic, almond flour, salmon, pepper, salt, dill, and mustard.

3. Shape into 8 patties. Fry them on both sides; about 3-4 minutes per side.

4. Transfer to a plate. If you would like, you can pop them in the oven for an additional 10 minutes (450 degrees F) while you make the cream sauce. This will make sure the middle is cooked through.

Creamy Lemon-Dill Sauce

1/2 cup of thick, full-fat coconut milk (I used the thick part off an unshaken can). If you do dairy, you can use sour cream.

2 TB of lemon juice

1 ts of dried dill

Few shakes of black pepper

Directions:

Whisk all the ingredients together. Pour over the Salmon Patties and enjoy!

More Than Halfway Through 21DSD and I Have a Flippin Cold!

March 1, 2013 by Jackie Ritz 5 Comments

The 21-Day Sugar Detox

Well, I’ve done it. I’m more than halfway through The 21 Day Sugar Detox and I was feeling mighty fine…then I got this cold, sore throat, and nasty plugged up nose. The first thing that crossed my mind was to go get spoonfuls of raw honey and soothe my burning throat. Crap…I can’t have honey. Ok, how about a cough syrup? I don’t think so. They all have some form of sugar and other weird ingredients.

Ok, so how do you tackle a cold when you are on The 21 day Sugar Detox?

1) Make a crock pot tea remedy and drink all day!  This is something a friend of mine taught me and now I do it every time one of us is sick. Put on a kettle of water and boil. Then add the whole kettle of water to the crock pot. Cut up a lemon or two, squeeze the juices into the crock pot, then throw in the rind. Next, add a few sticks of cinnamon, a few inches of fresh garlic, and a few green/or black tea bags. Simmer in the crock pot on low all day and drink when needed.

2) Substitute coconut oil for raw honey. Coconut oil soothes the throat just as good, maybe even better, than raw honey. I add a scoop to my mug of tea when I drink my crock pot tea.

3) Increase your Vitamin D3 intake to 1,000iu per pound of body weight. Yes, it seems like a lot, but it will knock out the cold in no time!

4) Blow your nose often, one nostril at a time. Blow it often too. If your sinus’ are really stopped up, consider doing a Neti Pot to help clear them.

5) Gargle! Gargling moistens the sore throat and brings temporary relief. Add a teaspoon of salt to a cup of warm water and gargle. Get the water as deep into your throat as you can. Do this four times a day. You can also gargle with a turmeric/cayenne mixture. Cayenne works so great because it increases blood flow to your sore throat and promotes healing that way. Add a 5 shakes of cayenne and 5 shakes of turmeric to a warm glass of water. Gargle it several times throughout the day.

I refuse to let this cold bring me down! I feel like I have gone through the worst of this detox…which even wasn’t that bad for me. I weighed myself yesterday and I have lost 8lbs! I haven’t taken my measurements yet; I will do that at the end to see how many inches I have lost. Other than the cold, I feel great. My cravings are gone and I am not even tempted by the amazing Paleo treats I have been making for my kids. I am considering staying on the detox throughout the duration of Lent.

I am posting halfway picture. The quality in the “now” picture is pretty bad. I’m sorry, hubby has been working a lot and I don’t trust my 4 year old with my Rebel camera…but I can still notice how my stomach is not as bloated! I’ll take a better one when I’m all done with the detox.

Raw Strawberry Ice Cream (Paleo, Dairy-free)

March 1, 2013 by Jackie Ritz 2 Comments

I’m in the middle of The 21 Day Sugar Detox so I did not eat this…I have had it before, but not right now. I’m being a good girl! But my kids ate it and loved it! Actually they had the soft, smoothie part of it for breakfast, and then later after it was frozen, they had the ice cream.

An ice cream maker is optional. I didn’t use one this time, but I have in the past. Enjoy!

Raw Strawberry Ice Cream

11728_490000831063449_1363284460_n

Ingredients:

1 (15-ounce) can of full fat coconut milk

2 cups of fresh or frozen strawberries (if using an ice cream maker, you won’t have to wait for the mixture to chill if you use frozen)

1/4-1/2 cup of honey or maple syrup

3 PASTURED egg yolks (this recipe is raw, so please use farm, fresh eggs)

1 ts of vanilla

Directions:

Place all the ingredients in a blender and puree till smooth.

Pour into your ice cream maker (if using one) or pour into a bowl (if not using one).

If not using an ice cream maker, freeze till firm.

Enjoy!

Spaghetti Squash Goulash

February 27, 2013 by Jackie Ritz 8 Comments

This is extremely hearty and extremely delicious! I am in heaven with this bowl of Spaghetti Squash Goulash sitting in front of me. My kids devoured it and hubby had thirds, so I think that is another one for Mommy! Hope you enjoy it as much as we do. This is a HUGE recipe, so, please, divide and conquer if you need to. I usually make the full recipe and freeze half. Or I take this recipe to a pot luck since it serves 6-10 people.

Spaghetti Squash Goulash

_MG_4800

Ingredients:

3lbs of ground beef
2 onions, diced
3 cups of stock (I usually use my homemade chicken stock, but you can use beef stock too) or water
1(29 ounce) can of tomato sauce or homemade marinara sauce
1(29 ounce) can of diced tomatoes
4 cloves of garlic, minced
3 bay leaves
2 TB Italian Seasoning
3 TB of Coconut Aminos (soy sauce)
1 TB of Seasoned Salt (I use this homemade version)
1 ts salt
1 ts pepper
1 ts garlic powder
1 large or 2 small Spaghetti Squash*

Directions:

1. In a large Dutch oven or pot, saute the ground meat over medium-high heat until cooked through.
2. Add the onions to the pot and saute them until tender; about 5 minutes.
3. Add 3 cups of stock (or water), tomato sauce, tomatoes, garlic Italian seasoning, bay leaves, Coconut Aminos, salt, pepper, seasoned salt, and garlic powder. Stir well and then cover the pot and cook for 20 minutes of medium-low heat.
4. Turn the heat to a simmer and cook for another 15 minutes.
5. Remove pot from heat and cool for 15-30 minutes.
6. Either stir in the cooked Spaghetti Squash or just place the mixture on top of the squash on a plate.

*While you are making the goulash mixture, cook the Spaghetti Squash in the microwave or in the oven.

**I served this with Almond Bread.
