Pumpkin Pie Ice Cream in 5 Minutes!

It is PUMPKIN season here! Yesterday I posted a Pumpkin Oatmeal recipe. Today I’m posting a Pumpkin Ice Cream recipe. Some other favorite pumpkin recipes on my blog are Pumpkin Pie in 2 Minutes Flat, Pumpkin Pie in a Cup Smoothie, and a No Bean Pumpkin Hummus. This recipe is awesome…I have to say, I am impressed with myself. In fact, I was going to post this recipe next week…but here ya go. Make it NOW. It’s delicious! It is dairy and sugar free…as most of my recipes are. The bananas sweeten this ice cream perfectly! Oh and did I mention it’s only 4 ingredients and NO ICE CREAM MAKER NEEDED?!?!

Pumpkin Pie Ice Cream in 5 Minutes

Ingredients:

3 frozen bananas

1/2 cup pumpkin puree

1/8 cup full fat coconut milk or raw/heavy cream

1/2 teaspoon of pumpkin pie spice

Toppings: coconut butter, pecans, and maple syrup

Directions:

1. Put the pumpkin, coconut milk, and pumpkin pie spice in a food processor. 

2. Pull out the frozen bananas from the freezer and slice them in chunks.

3. Process all the ingredients until the mix is smooth like ice cream.

4. Add your desired toppings and DEVOUR!

      You could! Or you can leave it out. It’s not necessary. It just makes it a little more creamy.

    This is my 24th day of paleo, and am searching for some variety in my recipes. Am very interested in this one, and have a bad banana allergy… any ideas for a substitute?

      Bananas are really the best for getting the creamy ice cream texture. You could try to freeze a couple of avocados and use it, but it will definitely increase the calorie and fat content. Still healthy though. Or maybe frozen mango.

      It won’t stay soft serve-like. It will get pretty hard, but you could thaw it a bit.

    GAH! I hate coconut. This looked so good until that. WHY so much coconut? I know… benefits… yummy to most… so beneficial. Guess I will have to make it with ram milk instead.

      It’s a tiny bit. You don’t even need to add it if you don’t want.

    ok. I doubled the pumpkin but kept the bananas the same. tastes too banana-y. We’ve already cleaned up our diets and cut out most of the sugar except fruit and low doses of sucanat in baking ( smily face here) so were more receptive to the taste of the food (test out my kiddoes–there’s no hiding even avocado!) So I added still more pumpkin and the rest of the can of coconut milk, heaped on the cinnamon, added salt. Still has the banana aftertaste. Oh well, it was a good try. So now its mixing in my ice cream maker to make what will hopefully taste like pumpkin pie ice cream (dairy free version). Thanks for the recipe suggestion.

      You can either buy canned pumpkin or you can just roast a pumpkin and puree it.

    I thought it was tasty and creamy. Not quite as frozen of a consistency but the taste was phenomenal! I drizzled mine with maple syrup and walnuts. Yum!

    I am on a very low carb/ ketogenic diet, and the bananas are way too sweet for me..too many carbohydrates. I am wondering if I can sub the bananas with some coconut milk/cream instead.. and if so, do you have a ratio of what amount of coconut milk/cream to add instead of the bananas? I know around here, 3 bananas is about 3/4 – 1 cup of bananas mashed.

    You may want to specify in the ingredients list “frozen peeled bananas”. I popped mine in the freezer this afternoon unpeeled; now it’s time to make dessert and they’re unusable til they thaw and I can peel them (and refreeze)…

      Too late for you but fun tip- if you run frozen bananas under warm water, you can take off the peel easily with a knife! No thawing required!

    Today is day 2 of trying to do paleo. This was absolutely amazing. I put it in the blender, add extra cinnamon and 1/4 cup of vanilla almond milk. I even shared it with family and friends. It does not taste healthy. Thank you so much for sharing. 😉

    I didn’t like it. Tasted mushy and bland…I make a really good one with coconut milk, toasted coconut, eggs, honey and vanilla extract.. Then you freeze it.. So yummy! I appreciate that this was only 5 min and I was so excited for it to be good.

    You can use coconut milk and toasted coconut, 2 eggs and 2 tablespoons vanilla extract and some honey then put it in the food processor and freeze it. Allow it to thaw a little before eating!! So good
