Fancy Bacon Peas

Have you ever ate something that made you angry? Like it was so good that it made you make a face that said, “Holy moly…how did you make this?“. Yea, that is the kind of reaction I get to my Fancy Bacon Peas. This simple, side-dish is sure to impress your family and friends…and it has bacon in it, so you can’t go wrong!

 Fancy Bacon Peas: 

INGREDIENTS: 

  • 16oz package of frozen peas, thawed out
  • 4 slices of thick-sliced bacon 
  • 1 shallot or 1/4th of a sweet onion
  • 1/4 cup of Mayonnaise (make it yourself)
  • 2 teaspoons of Lemon Juice 
  • 1/4 teaspoon of Pepper 
  • 1/4 teaspoon of Sea Salt 

 DIRECTIONS: 

  1.  Cook the bacon in a cast iron skillet over medium-high heat. 
  2. Remove bacon when crisp but leave the heavenly bacon grease.
  3. Saute the onions for 3-5 minutes until soft and tender. 
  4. Add the peas and cook for 3 minutes until soft and cooked. Remove from heat and put in a serving bowl. 
  5. Toss the mayo, pepper, salt and lemon juice till combined and smooth. 
  6. Add bacon to the serving bowl with the peas. 
  7. Pour the dressing over the peas, bacon and onions and toss. 
  8. Serve warm!

    Looks delicious, but I thought as the Paleo Mama you wouldn’t be consuming peas??? I’ve never read anywhere of anyone considering peas as paleo. Green beans sure, but not peas. Can you explain??

      We eat peas…never really thought that they would not be Paleo! They are Paleo enough for me!

    Well, they are considered legumes and most paleo people stay away from the legume family other than green and wax beans….. hmmm…. I don’t stick to the ‘paleo’ lists completely, but it just surprised me to see it here. I bet this recipe would be also delicious with other vegetables- like green beans! 🙂

    This dish is also very yummy with the addition of chopped up water chestnuts. Adds another element of texture.
