I was going to post these next week but I think today is good but wanted to get them to you in time for the Saturday football games! These muffins are delicious. I am a HUGE fan of buffalo chicken wings…HUGE. But they are just so terrible for you. We make them ourselves sometimes to cut down on the loaded transfats from frying them in canola or peanut oil, or whatever they use. But, I wanted to create something that I could grab in a hurry and that was actually good for me. Great thing about these Buffalo Chicken Muffins is that they are loaded with protein and, also, perfect for you if you are doing “Kick the Weight with Keto” with me!

The Buffalo Chicken Muffins do the trick! In fact you might not even want to eat chicken wings after these! I’m not joking…these are amazing! You can make a a batch for the week and then just reheat them accordingly. Another great thing about these muffins is that they are CHEAP to make, especially if you use chicken breast and not expensive ground chicken.

Buffalo Chicken Muffins

Ingredients:

  • 2 chicken breasts (raw) or 1lb of ground chicken (cheaper to grind yourself in a food processor)
  • 5 eggs
  • 1/2 cup of bleu cheese (you can omit this if you really, truly need to)
  • 2 green onions, chopped
  • 1/4 cup of Frank’s RedHot Buffalo sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon baking soda

Directions: 

1) Heat the oven to 350 degrees.

2) Chop up the raw chicken breast into large chunks. Then throw them in the food processor. Process for about 30 seconds until it is completely ground. Let it rest for a second.

3) In another bowl add the eggs, green onions, bleu cheese, baking soda, salt and pepper. Mix till blended.

4) Add the chicken, bleu cheese, and hot sauce to the bowl and mix until everything is incorporation.

5) Scoop into a silicone muffin pan (I love this one) or a heavily greased muffin pan.

6) Bake for 25 minutes till muffins are firm.

7) Serve with extra hot sauce, ranch, celery and carrots! Makes 12 muffins!

      They aren’t that spicy at all! I dip mine in more hot sauce because my kids won’t eat them if I put too much spice in them. But, the recipe is good for just enough buffalo sauce bring in the flavors!

      I didn’t have ground chicken so I used Jimmy Dean premium pork sausage hot it was delicious. I definitely recommend trying it

    I’m wondering if I could cut down on the amount of whole eggs and use some egg whites (3 whole eggs and 2 whites or something)?

      I am wondering the same too;) like maybe substitute almond flour for 2-3 eggs;) Actually, to be truthful, I CANNOT tolerate eggs. YES …truly tough as a paleo:( IM totally making these though.

      I’d like to know this, also. Chicken is milder but I can get my hands on ground turkey a lot easier. I’m definitely going to try this recipe. I’m diabetic and also don’t have an appetite sometimes. I think these would do the trick.

    But… Frank’s Buffalo Sauce isn’t Paleo.. it has refined salt, Xanthan Gum, and “Natural Butter Type Flavor”
    (who know what the heck that is)

    These are really good! I like them with less egg (or just a bit of coconut flour instead of egg), and my only other sub is Organic Harvest Foods jalapeño pepper sauce which I think is paleo. My son is on SCD, so that’s our go to hot sauce 🙂 Oh, and my 18 mo old loves them – so they aren’t too spicy.

    I already have cooked chicken breast in my fridge….would this work if I ground up the cooked chicken in my chopper and just added it to the recipe as it states?

    I just made these and they are yummy..I didn’t put the hot sauce in them I didn’t want them spicy so we will put it on the side..So good and I just put the chicken breast in the vitamix to grind up since I didn’t have ground chicken

    made these for post workout breakfast. I used chicken leg quarters instead of chicken breasts. I omitted bleu cheese and added small bit of melted butter. I didn’t measure, just eyeballed the amounts (probably added quite a bit extra hot sauce). these muffins turned out to be absolutely delishious! I’ll definitely make them again and soon! I’ll also try out more of your recipes in the near future. thanks!

    These look amazing and convenient! Just a heads up though… Frank’s buffalo sauce contains sodium benzoate, which can bring on some pretty nasty side effects, especially for anyone that is sensitive to chemicals and preservatives. I’ll be for sure trying a modified version though. 🙂

    This is an awesome recipe! Only difference is that I had to bake them for a bit longer than 25mins. More like 35mins.

    For those concerned about Frank’s not being paleo, use the Frank’s Original Redhot. Just real food ingredients.

    I am going to try this recipe using pre-cooked chicken. Hope it works!
